The genetics must be there but without proper care the head wont pop as big as it could. Like the op's situation. Feeding bad foods, keeping your fh with other fish, trying to breed it with another male flowerhorn etc will hinder the head growth. My water kok silk's head will drop if a female is bothering him or he isnt feeling well.
So you are saying you can take a fh with head genetics, feed it garbage and not do waterchanges and it will still grow a large hump? Where are you getting this 90-10% stuff? Nuchal hump is a fatty deposit period. It may be red in whatever picture but its fat. There may be muscle there but its fat storage.

This is untrue, a flowerhorn is 90% genetics and the other 10% is water quality, food, a how often it is fed. You cant make a low quality fh a high quality fh just because you take "proper care" of it. A stunner will be a stunner regardless of conditions unless its drastic. The head IS NOT FAT. Its protein, how are you going to argue a picture of a flowerhorn's head cut open? You think that red meat is fat? Its protein or muscle, there is a small sack of fat under the kok but that is so minimal.
Look at the fh's food that claim hump growth, how much protein does it have compared to regular fish food?n Okkio claims upwards of +60% protein and why? For muscle development which is the key aspect of the fh's hump.
Where are you coming up with that a fh's kok is made from fat?
