Looking For a "Conversation Starter" Type Fish for My 125 Gallon - Suggestions?

I say go with an eel, tire track or fire. and a datnoid.

Tire track and Fire eel will both outgrow a 125G... maybe something like the peacock eels etc would be a better choice being MUCH smaller...
 
^ OP already said he won't be upgrading, and Fire Eels can reach well over 2' in around a year or two, so as said before, Fire Eels and Tire Track eels are NOT a good choice...

I recommended a fire eel because mine is taking forever to grow but yeah i didn't notice he said no upgrade, my bad Homer.
Anyways..

Red Severums and Flag Tails always amaze people and flag tails clean the heck out of your tank, i haven't seen any algae in months!!

^ given a proper diet and enough space i've heard of fire eels reaching close to if not over 30" in less than 2 years...

Largest being a monster 40"+ in about 2-3 years...

Black Ghost Knifefish is your winner, people who aren't familiar with the hobby and are used to goldfish tend to be awed when they first see a BGK, even more so when it grows out :D

I see alot of people dont seem to see that you said your not gonna be upgrading :D Gulper Catfish should grow to around, 12" to 14" and ive heard theyr easy to handfeed. The smaller puffers are cool to, even tho they like brackish water. Stingrays are very cool, planning my Whole stingray "journey" my self, but a 125 wouldnt fit any of them for life. I've had Frontosas my self in my 140 gallon, and theyr where my favorite fish, and when they started breeding it was just awesome.. Watching them breeding, laying eggs, and having their fry in the mouth was very facinating. I kept a Little Group of 3 Synodontis Eupterus, they hid alot but when theyr where not hiding theyr where very nice looking fish.

Not all small puffers are brackish, there are plenty that are 100% freshwater...
