i feed a wide variety of food for my fish from pellets to live gut loaded insects and worms to fresh market seafood.
all fish eat a variety of pellets as staple daily consisting of high quality pellets. these are what i feed... xtreme aquatic
monster pellets, hikari gold, hikari carnivore stick, hikari jumbo sticks, high quality shrimp/krill sticks, sinking carnivore,
hikari massivore, nls arowana floating, nls gold, nls sinking, hikari algae wafers & hikari gold bio+ for pellets. for live
i feed gut loaded meal worms, superworms, silk worms, dubai roaches, earthworms, red wigglers, night crawlers,
canadian crawlers, crickets, frogs & centipedes. as for fresh seafood i feed shrimp, tilapia filet, tuna filet (as treats),
and salmon filet (as treats). now this is what i feed all my fish not just cichlids. for smaller fish fish, fry and growouts
ill add live brineshrimp and bloodworms along with the diet.

That's a lot. I am thinking of going with xtreme aquatics monster but those pellets are too big for my other fish.

they have smaller sized pellets too

I feed a mixture of YourFishStuff brand foods: Cichlid pellets, monster fish pellets, large veggie sticks, krill. Sometimes I mix in the spirulina pellets too. My only beef with this brand is the cichlid pellets and spirulina pellets only come in one pellet size. So I may switch those two to a brand that carries a larger pellet size for those pellets (I'm talking size of actual pellet, not size of package). My gibberosas basically get mostly krill though. Everything else gets the mixture.

what are the most important things to look for when buying fish food. Also how much protein/fats do i want ?

depends on the diet your fish needs but good pellets will have around 60-70% protein
