What is the most relaxing fish, if you were to setup a tank for just winding down after a long day. There are many fish that are fun to watch but few are truly tranquil enough to immediately have a stress free effect.

some sort of calm shoaling species, admittedly I can't decide on one lol
Goldfish are very calming as they slowly amble around, mouthing the substrate and gently explore all areas of the aquarium; especially the fancy varieties that basically have to move slowly due to their finnage, they're number 1 for me.
I'd also mention marine, not so much for the fish; but for the living anemones etc flowing about gently in the water currents.
I would say my rays. I've owned many fish but the joy to see a ray in your tank swimming freely and seeing their smile on their belly( their mouth lol) is so relaxing.
My biggest headache fish are arowana constantly worrying about it jumping and etc
I'd say this is a personal decision. . I Could stare at a shark tank and feel completely relaxed and tranquil. Same with my bass where as other fish like goldfish and what not I find boring and not relaxing.
I put my discus tank and reef tank in my bedroom because they're the calmest tanks I have. The axolotl is pretty chill too though. My ray is closer to a wet pet who's constantly begging for food or he's topping his sevrum chew toy.
I'd go with a peaceful planted community or a reef if you're looking to unwind
