Why your water PH keep droping?
Unstable PH would likely killing your fishes faster than ammonia.
If you have cheap fish then I would say leave your tank alone and stop messing around with all water change, everything will be ok.
tested the tap and its 0ppm of nitrate
Where do you live? 0ppm "tap water" almost impossible to believe unless you're using RO water or other source water that not from City Water Supply.

The ph and ammonia is screwing up my jardini it developing grill curl. I'm trying crushed coreal to see and raise the ph alittle bit and I live in sf.

Jardini Arowana actually refer soft water so if your PH stay stable at 6.0 then no need to mess around your PH, stop feeding your Aro for couple days and see if ammonia still exit in your tank. Also, fish getting gill curl if its living in high ammonia environment for long period of time, and lacking of water movement can lead too gill curl for some fish species too.

I don't think it's my tank since it's 7x2x2 and it's the ammonia since it's at 1 or 2 ppm
