I'm leaning more towards a lavarock aquascape than driftwood? Would that be too open for the puffers? I will have some larger plants near the back of the tank for them to hide in.

Can be done, but I'd personally opt for the wood; and smother it in moss, Anubias; trident etc at the back

I'm getting a kessil because a lot of the plants I like require high light (mostly red leaved).
 
I'll try to find a nice piece of spiderwood this weekend. Most of my equipment is coming Friday, so I'll start setting up and cycling the tank then. Hopefully I'll have the time to provide a few updates.
 
Since I'm going to get more demanding plants like Alternanthera and Rotala, how much co2 should I dose? 3-5bps?

Go by a drop checker, green and you're good, yellow is too much; blue too little. Of course, you can ramp up the co2 to the max in the first few weeks to maximise plant growth and minimise algae
