Single fish for a 30 gallon.

Acara, angelfish (if deep enough), puffer, giant Betta, ram, convict, there’s a couple of options...not sure if any of those fit your taste...if your thinking larger fish like a Jack Dempsey or green terror they wouldn’t work in such a small tank
Angelfish might be an option. I like my fish to have room to swim so i wouldn't put a jd in a 30 gallon.

Do it nice planted with rocks and drift wood sticking out from back and tie anubias on the drift wood. Do pea puffers! Get a male and about 5 females. If you do rocks sticks and plants right youd be golden.
I had a planted tank and sold it due to a busy scheduled. I don't think i can keep planted tanks.

How about a couple smaller catfish? Or one larger catfish. A pair of catfish with attempts to breed? If you like the idea then I can give names of catfish that I think would be suitable.

That will depend on your choice of plants. Some will require trimming at least once a week while others only every few months. If I had your tank I would do an Asian community tank with some smaller barbs, loaches and catfish. Lots of action and interesting behaviors. In a thirty you could even have a chromide as a center piece with the fish listed.

Depends, if you wanna go brackish then a figure 8 or green spotted puffer would be cool.
For freshwater a dwarf pike cichlid, axolotl (not a fish, but still aquatic, you could get 2 of them if you want), an african butterfly fish, a leaf fish, or a congo puffer/hairy puffer.

If getting a Convict though you'd want to spend the time and money to get a well bred one. The majority around are poorly bred. Be a shame to set up a tank with just one hoping he'll be nice in a year or two once mature. And then discover, oh...He's just grey and muddy due to decades of inbreeding.
Agree, try to find ones that are really dark. Or you can try other Cryptoheros species, there are many nice ones out there. I've never kept them before but I like the blue eyes and the yellow on the Myrnae. Also Sajica's are cool

I had a solo male with severums that looked super nice, he had dark colors, long fins and a big hump. I traded him in because he's way too agressive. I'll see if I have any pictures, that was a couple years ago
