Are there any freshwater fish that can bite fingers off that you guys know? Full grown channa micropeltes? Goliath Tiger Fish? Vittatus? Aba Aba? Aimara? Asking out of pure curiosity.

Possibly a adult Pacu or adult Piranha.
Funnily enough I was reading something on the bite force of fish only the other day. Apparently, a nice bit of factual trivia for you, is that the black pirahna has the strongest bite force of any freshwater fish, living or extinct.
This is because it has disproportionately bigger jaw muscles for its size than any other fish.
Not sure of any others, but the black pirahna, given the chance, would probably cleanly snip your fingers right off!!

I did wonder myself, but thought it better not to ask. Some things you just don't want to know, lol. I'm just glad it's his fingers he's risking and nothing else!! Yikes!
Any of the large toothy characins shouldn’t have a problem. I’d expect any piranha big enough to fit a finger in its mouth to be able to take it off. Same goes for something like a mbu puffer.
Giant snakeheads are big, but their teeth are more needle-like. To me, it seems more designed to catch something and hold on (and eat whole), rather than the slicing action of a piranha. I’d expect a hit from one to be more like a snake bite.
