Thinset is the usual stuff they use for/under floor tiles, and my wife (architect) tells me it's the standard for tiling pools as well. It's a glorified cement mix of some sort. For pools there's 2 options around here- tiling, as above, which works well but is a little more costly (for pools= bigger), or using something called "Diamond Bright" which is a plasticized hard-render-type material that comes in many colours, but isn't as nice or as durable long-term. Diamond bright can also stain with tannins and/or algae if you don't maintain your pool (or stop chlorinating and add clown loaches), whereas the thinset/grout can be power-washed or scrubbed clean and the tile, well, they're tiles- nothing's going to happen to ceramic tiles.
I love this set-up, young Trinny. Nice, clean & easy. Electricity for this ol' pump is going to be a deal-breaker with the parental-units pretty quick, I'd reckon. Think about setting a couple of submerged planters (1/2'd Angostura barrels are great) with filamentous plants and lilies and a bubbler system to keep everything moving, maybe as a bubble-lift to an exterior (or interior?) sump filter. Then rig the house's storm drains into the pond to get your water changes done hands-off.
