Fresh or even raw.. but not stanky and out with nothing to keep the food hot or cold..
Or maybe some intestines that haven't been cleaned out... see the difference in that is when I eat a 'tripa' taco, it's been cleaned of it's poo poo and deep fried... but in some other places (not always another country) the poo poo stays right where it was when the animal was killed.. and cooked that way.. and consumed that way.. people who have eaten that their whole lives would not be affected by it so much (over loads of bacteria) like someone who has never eaten something so poopy. ..
