Whats your tank set up? Mine starting breeding the second day I put a female in.

Serious question. Could my fish be hermaphrodites? I don't know much about fish sexual organs but the two "females" that are guarding the eggs have something protruding where the penis (or w/e its called) on a male would normally be and they are rubbing it on the eggs. Is it possible they could lay the eggs and fertilize them?

LOL. Those are their egg tubes. They are just laying eggs. It's not uncommon for female convicts to bond when a male is not present. They will guard the eggs like a real pair but you will never see fry without a male Convict or any male cichlid in the tank.

Female fish have rounded tube-like sexual organs, males' will be narrower and come to a point.
