You may also want to use the same water (water from the 10G) to do water changes. Like starting off by putting 5G of water from the 30G in each 10G and then put 1-2G of the 30G water in each 10G when doing water changes. So acclimation isn't so hard on the shrimp.

Will I get in trouble with a little highjack here? I'm trying to breed shrimp as feeders for my F8 puffer. At the moment, I have ghost shrimp, but no babies. What shrimp are better breeders than ghosts?
