Sajica is a good idea. A pair of any of the cryptoheros type species would work. Look into P. Panamensis as well, I have them and they are cool fish, would be fine in a 40gal.

Any tips on where to find some solid info on getting into the shrimp game? haha . They are fun little critters and I do love to do aquascapes.I'd like them too but never see em. If not fish shrimp are really worth going into! They pay for themselves (and other fish) within a few months

Aquascaping is a load of fun too! I suggest you try it with shrimp, they keep everything spick and span
I'd recommend cherries or sakuras to start, easy to get and easy to keep too. Just run the tank for a few weeks beforehand to help build up algae and bio bacteria since shrimp are somewhat allergic to new tanks
I second the Cryptoheros idea. I have a couple of forties ,One was a nano , with puffers, badis, galaxy rasbora but now houses my juvenile Green Texas.(with a lot of nano still in there
) Cryptoheros are my favorite behavior wise, a couple in a forty you couldn't go wrong with any in that genus.

When my spare forty is empty I was planning on a Rainbow or HRP pair with some swordtails.
A pair of Jewel cichlid's would do great in there, also would be a great pair to do a bioscape with.
A red high fin wolf fish could live in a 40. They generally just lay on the bottom until it is time to feed.
