Inverts are basically meals on wheels for most fish out there that's why they are normally shrimp only tanks or only other fish know not to eat them.
As I have not looked into this myself I don't know of safe fish to go with inverts.
Unless you have lots of hiding spots, the shrimps are most likely all going to get eaten. At an aquatic show, I saw inch long dwarf cichlids going after a shrimp the same size.
Well that is what I figured... ok well I do like the idea of Convicts and maybe those Hoplo catfish as a setup. As mentioned the Convicts as the centerpiece and 3-4 cats for background should look decent. Maybe a couple snails for cleaning crew
The Cons and Cats will occupy the bottom 1/3 of the tank, so you can add in some fish to occupy the rest. Swordtails, Molly's, Plattys are from the same areas, or you could use taller bodied tetras like Bleeding hearts or Black skirts.
I was recommend to source them from a local breeder and it went well. They were right back to chasing me at the glass for food about an hour into their new tank.
