You can keep a single flowerhorn. Many people keep them singly in 55s.
 
Maybe a datnoid? In the long run you need a big tank, but if you start out with a datnoid around 2" it will be able to survive for a year.

from what i hear afb's are most incredibly boring fish you can keep in an aquarium unless they are eating :nilly:

My suggestions for stocking would be some african cichlids. But since your not so into them I would go with some poly bichirs Giant danio's tiger barbs etc :)
