Bigger is always better. 2 AC70's are good, 1 AC110 & 1 AC70 is better and 2 AC110 is Best... Just think of it as the manufacturer always puts the Max (or close to) their product can handle. From my understanding Piranhas are very filthy eaters so I would go w/2 AC110 (3 if possible:headbang2).
Side note, 30 AC110's or 2 will not change the need of water changes.

I've had ac70s not fit the rim of 75g tanks properly. 2x ac110 perfect for 75 gallon tanks.
 
Ac110 are great man, but you should have bought 1 and used the rest of ur $ on a decent canister for proper mechanical filtration. I run an ac110 and a rena xp4 for 5 red bellys on a 90 and this is barely just enough!! If ur sticking with the 2 ac110 pick up a good uvc sterilyzer, since piranha are very dirty this can lead to micro organisms and eventually parasites like ick and all that bad stuff. Sometimes my girlfriend thinks its way to much but for rbp u can NEVER have enough filtration!! Also they need strong currents to swim and exercise and a ac110 doesnt provide much current, but a canister will or a circulator.

If they are messy you won't beat aquaclear as far as ease of maintenance. Just turn off the filter, pull out the baskets and rinse the sponge and media. A lot easier to do regularly compared to cleaning cans.
 
Nice man! Just make sure the uv is uvc and has a quartz sleeve to house the bulb, thats how u know its decent quality! If ur going with 2 ac buy an extra intake tube so u can have it atleast 4" from the bottom to ensure efficient siphoning, and like the last poster said take the tray clean the sponge and media but be sure to use the tanks water for this as tap water has chlorine which kills good bacteria and clean 1 ac at a time!!
