I was gone for 12 days so you can imagine what the nitrates were when I was gone. I think they were around 35ppm. when the tank never used to go over 10ppm. I feel for you man tough break.

Oxygen exchange only happen on the surface of the water, so when the bubble break the surface and agitate the water, some o2 exchange happens, but it isn't much.
So it was most likely something else.
