Best fish to stay in a 75g for life?

Title says it all, I've got a 75 gallon tank that i have 2 gars in until they outgrow it. After that, i dont have any real plans for the tank. I think id like a community tank but ive also thought about doing a pair of discus or angels. Mostly i am just looking for fish that can stay in this tank for life. If its a predator, thats bonus points but i dont have any preferences other than i would prefer to not have common cichlids. Ive been down that road and they just arent my favorites any more.

No set preferences. I am mostly just looking for info that I can come back to, or to see if anyone has suggestions that just sound interesting to me. I tend to keep more oddball type fish, and part of me is leaning back towards getting back into puffers but i am open to anything. My only guidelines are that whatever i get needs to stay in this tank
 
Most puffers short of the big guys would be good. Amazons are my preference, them or schoutodini would get along with other fish.
Red wolf fish or an exodon school would both be beautiful and aggressive.
African riverine with congo tetras, smaller polys, butterfly fish, and kribs would be cool.
 
what would go well with amazons? Ive also debated a very large shoal of peas.
Unfortunately wolf fish are on the banned species list here, but exodons ive seen in my LFS so that could be cool.
And which polys are the smaller ones?
 
For a 75, I’m pretty sure the go to polys are senegal, Delhezi, and moke. I’m sure there are others but bichirs are definitely not my specialty.

I currently house my amazons in a 36 with mollies, serpae tetras, skunk + sun loaches, and a bn pleco. Outside of the occasional nipped fin there really isn’t much aggression.
