And If the ammonia does spike if I happen to add too many fish All i need to do to control it is dose with seachem prime and do water changes correct?
 
I wouldn't put GT, convict, and FM in a tank that small (along with zebra danio and cherry barbs). You could try a convict and firemouth that are around 2-3" each. Use the liquid ammonia test to make sure that the ammonia doesn't go above 0.25ppm. Give it a week before adding anymore fish. (FM, convict, zebra danio, cherry barbs).

Or GT plus keep the zebra danio and cherry barbs. Stock with additional dither fish like congo tetras or colombian tetras or buenos aires tetras in schools of 10+.
 
I was planning on putting Firemouth Convict and GT in there alone after taking out the 3 zebras and 6 cherry barbs, not having them in together, and a week later adding the severum and dempsey and MAYBE a cory cat or two

Way too much in terms of bio-load in 2-3 years and not enough territory. Cichlids don't look their best when stressed out. Convicts and firemouths will easily fight a 4 foot territory. You're still taking a chance with just a single convict and FM in there.

A single severum with 12+ cory cats will work. Cories do best in very large numbers.

If you really want to stock that many cichlids, make sure you have hard water (not PH value), and do African cichlids from the lakes.
 
However I see this video with far more cichlids than I intended and they all look fine together Yes it may be a little crowded but none of them look dangerously stressed out. I understand that it is a big bio load for the tank but With weekly large water changes I think It could go over well. But then again i’m new to the hobby so what do I know. I'm trying to set you up for success so that you will enjoy the hobby. What you see in youtube is a small snapshot in time. They generally don't talk about how long the inhabitants have been in there, how often they change fish, etc. If you can only do weekly water changes, stocking heavily like in the video, is not enough. Many of these cichlids are capable of living as long as dogs when well taken care of.
