Convicts are quick, but golds work pretty good and grow quickly. I have a 65 gallon bowfront that I breed comet goldfish in, works great. Platies would also be a very good option, a well established school in the 55g. would sustain those fish.

If you're going to use a cichlid look into the N. brichardi cichlid as they live in colonies where older offspring help care for younger offspring, that means no predation by parents or fry. They only reach about 2-3" in length so a 55g would work well, plus they're just a really neat fish to keep. I would suggest not going with red devils as a 55g really won't provide enough room for both parents and the fry they're rearing.
