Definite way to sex crayfish is using this:

For the Procambarus, use the 2nd and 3rd photo set.

For the Cherax, use the 1st photo set.

Any only lobsters have one larger claw than the other. Crayfish, both male and female develop evenly sized claws. The only time there should be size difference is if one was damaged/lost and it's regenerating.
 
Sorry but which one is the cherax and which one is the procambrus?

The brown one is the Procambarus, the blue one is the Cherax. And for 100% accuracy, yes.

And yea, I have a big male (9" w/o counting the claws), he's tagged me a few times. If you grab them right behind where the claws/arms attach at the body, they can't maneuver enough to reach you. You can also, if you want, force their arms forward from the same position and then hold them by the claws. They have no arm strength, so you can handle them easily that way.

Had 4 crays in my 75 gallon for about a year, never touched any of my ca/sa cichlids, were very good bottom cleaners though!
They all met there demise when I did a large tank cleaning and removed all the shelters and my oscar noticed them.
Funny to see an oscar with two claws hanging out his mouth.
