I think some good options for your situation would be A. trimaculatus, A. citrinellus, ex-Cichlasoma bocourti, P. motaguensis, P. friedrichsthalli, and V. synspillus. All of these grow pretty large (the synspillum MIGHT be a little tight in the tank when full-grown) and have great color. Most are rather hardy as well.

Great choices! I was going to say Trimac myself they are on the top of my personal wish list right now lol but the others you said would be great as well
 
festae if you can get your hands on one, but if not Trimacs are awesome! i would also look into Midas or other amphilophus fish
 
Wow I was shocked when I woke up to two pages of replys. I have always liked the festae/red terror, and I actually saw a local selling 1" fry for super cheap. I don't mind some of the' frankenstein looking forehead fish' but i'm not calling the shots, this is just helping a friend. I don't have time to look up all of these right now though. Thanks!
 
From what I have read, it seems like if you go with Festae, get a pair. This way the female will show off the really bright red coloration (more so than if she is by herself).

You might get a few of the fry, pair them off as they grow, and sell some along the way (you'll make a few bucks this way, and ensure that you end up with the nicest pair out of the batch).
