You will most likely find that this "poo eating" is not actually what it seems. They are probably picking up the feces and breaking it apart looking for salvageable and edible pieces of leftovers in it. These smaller, lighter pieces of excrement are more easily are readily pick up by filter currents and removed from the water.
 
Plants definitely can help in keeping a good balance in your water. A good biological cycle will help to reduce the ill effects of waste, however water change is essential. Since you mentioned koi, I'm guessing you have a pond. Snails would help, however certain species can become pests to your pond. Do your homework before adding anything to your "eco-system"
 
My LFS sells something that I add to my water and breaks down the soild waste then any little current you have will be able to pick it up. Or if you have a planted tank substrate like mine then it gets broken down through that.
