Are there any early warning signs that I should be aware of that screams "too much co2"? I just starting running co2 on my 75 since I started adding more and more plants. This is my first tank with co2. How much is too much? I'm running 1-2 bubbs per sec.

Ph drops but when is it too much, i cant tell you. Google drop checker.

Edit* clockwork beat me to it

When my co2 went crazy and killed some fish , I noticed bubbles under my plant leafs and the fish were also under them.
I'm not sure if the fish died due to not enough O2 or if it was pH drop.
Just get a real good regulator or you'll be sorry. I am!!!!

Go for the drop checker. You can find some good deals online, I know eBay has some. Take the guess work out of it, the amount of CO2 needed can vary as plants get added, grow ,and get trimmed back... You'll have a visual indicator every day where you can instantly see if you have ideal levels.

Agree with whats already been said, without a drop checker its all a guessing game... since Co2 pressurized kits size recommendations tend to be more how long the bottle of Co2 might last for said system, since how many bubbles we actually pump out is our choice...

Best visible sign you'll have is fish at the surface of the water gasping. The bubbles that appear on the underside of leaves is oxygen produced by the plant during photosynthesis and is an indication that the plant is photosynthesising, not that there is too much CO2. A drop checker is useful if you know how to use one, which sadly many don't. Using 4KH solution and bringing it to a nice green colour when using pH regent will let you know you roughly have 30ppm, but 30ppm isn't the optimal level of CO2 for every tank.
I've taken tanks way past this and into 50+ppm with no bad signs from fish.

pH drop from CO2 will not kill fish, the shift is temporary and it isn't pH that kills fish, it would be KH related swings that CO2 will not do. You're fish died from lack of oxygen.
