for smaller tanks under 100g I think exodons are the best and for tanks 125g and larger nothing can compare to a school of red tailed payara / hydrolycus tatuaia. And the my second choice for a large tank shoal would have to be fresh cuda's yellow tails and red tails 50/50. I am working on both the latter.

most small tetra species sold at lfs are schoolers. so i guess just pick your poison.
giant danios are pretty cool schooling fish....for bigger tanks, I like tinfoils and silver dollars. Now someone has mentioned silver dollars Retuks 
i still dont think anything compares to feeding time with a shoal of exodons. Except maybe rbps, but then your talking about a monster tank, and my whole point was to keep it 75g and under.

Nobody has mentioned silver dollars? I <3 my school of 6 common silver dollars and 5 red hook silver dollars. Its a 125g though, not sure if you could do red hooks in a 75...but I don't see why you couldn't do a school of commons

I personally wouldn't go with exodons...They are a waster of time..With most if not all of the other suggestions you could keep something with them if you wanted while exos are just a species only of pretty ugly fish...Most people I know who went with exo's in a decent sized tank have regretted it...
I personally would go for one of the larger species of rainbowfish, my fave being the reds, or a shoal of angels or discus
Corydoras are probally the coolest shoalers and there is so much variety. They are truely awsome fish
