I'd never de-claw them. If my fish can't eat them naturally they shouldn't be eating them at all.

Only reason I'd advise de-clawing is to avoid internal injuries caused by the cray once their inside.
Same reason you wouldn't don't feed live mice to snakes i imagine.
Either way, I'm more a gentle giant man myself, and have never fed anything bigger then earth worms, so maybe I'm way off on this one eh?
