Cycling tanks.

I just put a cycled fish into my uncycled tank and the results are: a cycled tank.

When I got back into the hobby and didn't have a cycled tank, I did a fishless cycle with bottled cleaning ammonia and it took several weeks. Now, if I set up a new tank, I just use media from an established one and it cycles pretty much instantly.

Like others have said, tanks cycle whether you know it or not. The way you cycle it determines how much the fish suffer...
