Just how many babies will they have?

Depending on your water conditions, you can have a spawn of 50- 200+ but with you set up chances of survival maybe 0 to a handful.
Don't know what better way to say it... But, i don't think your ready. Lets work on keeping you pair healthy for now!

Ok, I don't know that they're gonna spawn anytime soon. Good news is the smaller one at beef heart. How do you tell if one is male or female?

Really???? Time to go rename my fish..... :D

I seriously hope you didn't get scammed on these two fish. RFI does not have the best reputation for selling healthy discus or sending correct strains. And this is from both searching forums and personal experience.
As to your question you do not have enough tank space to breed discus unless you are going to cull batches down to almost nothing.
And as for size being a predetermination for breeding that is not an accurate way to judge. Breeding is not determined by size it is determined by age. I have seen 3" runts lay eggs. When you buy a breeding pair ask for age, pictures/video of the pair with eggs and or wrigglers, and when the last spawn was.
Sorry to say you most likely got sold two fish that were showing breeding signs.

He said the last spawn was a week ago, but besides the frayed fins the discus look good.

They are always like an inch apart from each other too

I have two proven females that school together all the time, so the swimming around together thing doesn't always mean anything. Plus yours are the only discus in the tank they will school together. Discus are for the most part a schooling fish.
