White stringy poop is a sign of internal parasites. Move the fish to a small hospital (10 gallon) tank and medicate with Jungle Parasite Clear. It can be bought from petco, petsmart, etc.
There color change means nothing (I believe) besides mood and age.
The longer you wait, the greater your chance will be of them not surviving. Most folks lose there EB's from not acting quick enough after they've noticed a behavioral change.
