Locally freshwater eels are usually smoked, like salmon would be. Very nice 
They can be cooked in a curry, that seems to be the Scandanavian way, of if you are out camping and are just hungry, fried over the campfire is fine too
Like the folks say, watch the water quality where they are caught. They are very long lived fish and could easily accumulate toxins as they are at the top of the food chain.
