ever seen a fish like this?!?!

unfamiliar with the coldwater market over ur side of the pond, is it likely to be a sterlet? ive been contemplating trying to acclimatise one up to mid 70's for bout a year and always been to scared?
 
True sterlets tolerate higher temps than any other Eurasian species. The most warmth tolerant I can think of is the Mississippi Shovelnose sturgeon.
 
i have always wanted to have pne, im going fishing fishing soon for the big ones i hope, its hard to find the warm water ones for tanks, i have only seen a few for sale

what happens to fish this huge that are caught? are they cut-up, cooked and eaten by the anglers? or is this a catch-and-release thing? i just hope they dont waste such a magnificent catch
