im just curious would it be better to run a 200/100/50 then a 100/50

Thats exactly what I'm doing. I got mine in the mail a few days ago and once I get a 125 that I feel comfortable putting water in (mine has a leak in a spot that I don't even want to risk attempting to seal, because the tanks going in a bedroom) I'm going to run a 200 micron inside a 100 micron inside a 50 micron. I'll let you guys know how it works out when I get it up and running.

After seeing that particles over 40 microns are visible though, I may ditch the 200 and use a 25 if i notice anything in the water.

I am going to just do four or six 25 micron socks as the mechanical. Basically enlarging Jose's sump design because it is for a larger tank. I want to try and eliminate all visible floaters and, as the eye cant't see anything smaller than 40 microns, that means using 25 micron socks.

I order the 'polyester felt bags with galvanized steel retaining ring'. Been using these for a while now, and they've get cleaned in the washing machine over and over, they continue to work just fine.

Is the galvanized steel covered with plastic? If it's not, is there not an issue with it in the water?

No it's not covered, but the steel ring is not in the water at all, so there's no concern.
