He's trying to say that after 2 days, you probably do not have enough beneficial bacteria in the filter and in the gravel to digest waste. (fish poop). Get yourself a good testing kit. The freshwater master kit from API is very accurate. For the first month or so you will need to test your water constantly. Maybe every day after work, maybe more. When a tank is cycling, you will see a high level of ammonia first. Do a couple water changes. After ammonia you will see some ammonia and some nitrites. Bothe of these are toxic and will kill fish, so do more water changes. After a few more days you'll see nitrates. This is algae food, so do more water changes. After a time you will only see nitrates, this is good. Do water changes to remove most of the nitrates, and you can consider yourself cycled. Though it can take longer or shorter for different people.

I'm sorry, I don't understand what your trying to say.
I'm saying you are correct in saying that the water quality is more of a concern that the aggression.

I'm going to pick up a testing kit tomorrow so I can start checking the water out. My dempseys seem to be getting along fine now they stay side by side a lot and seem to circle one another

Today I noticed that my smaller jack dempsey is hiding in a cave and will rarely come out. Last night it was swimming like crazy. It will come out and swim around to eat then go right back into the cave. Is this normal can it just be claiming a spot?

That most likely means one of the other fish, most likely the other jack dempsey, has beaten this one, and it's scared. This happened with my two jds. The only way I got this behavior to lessen was to put the victim in a quarantine for about two weeks, and when I upgraded the tank I put the victim in first and kept her there for a week before introducing the other fish.
