So in the past few months I've gotten back into fishkeeping after ~20 years out of it, and one thing I've noticed is some fish that used to be pretty common, aren't anymore. Like these:

Mormyrids (Elephantnose, baby whale)
Pantodon (African butterfly)
Black aro's
Anostomus (headstander)
Redtail Chalceus
Hoplo cats
Glass cats
Weatherloaches
Geophagus species
Aequidens species (blue acara, port, keyhole) - I only see green terrors
common/wild-phase O's
Rainbow cichlid
Red chromide

Now I know I could probably get most of these online, from somewhere or other, but it just surprised me because I was used to seeing most of these whenever I walked into an LFS. I understand the scarcity of the black aro, and I'm guessing nobody's bothering with breeding the normal oscar much between the longfins, pinks etc. Anyone else notice this, a fish they just don't see for sale much anymore?

Conversely, I was surprised to see fish I'd always considered "rare" in the hobby (like dats & pbass) at the LFS...

It must be a regional thing like style and fashion. All of those fish on your list are available at my favourite LFS. The pantodons are only around for a couple of months a year as they are usually wild caught.
I'm sure that if you express interest at your LFS, they will bring in a few of the 'old standbys' that may have fallen out of local favour. The trick I think is to have a lot of variety for the punters to choose from.

My local petsmarts has most of the listed fish in stock most of the time-Anne

How about Corynopoma riisei.

I had one about 15, 20 years ago, and have not seen a single one since. (Swordtail characin)

Blue eye panaque, loricaridae sp (sand sifters), Betta Embellis, montezuma sword, splash tetra, peacock gudgeons, and a whole bunch of the knife fish!!!

Oh forgot Festivums and black sharks.

Well that's it, I'm sure you can find all of those. Maybe it is a regional thing as I've moved (from Connecticut to Florida). The only ones I'd really go looking for are Geo. jurupari and the chalceus, may try to track those down when I get the bigger tank.

All those fish are fairly readily available to me at various LFS/LPS's...

All those fish are fairly readily available you...
If not at your LFS in stock, then have'em order them, that or simply purchase online.
