I would go with a heavily planted tank, with a few nice pieces of manzanita with plants growing on them also.

Stock wise, I would either go with possibly some marble hatchets for top level fish, a school of congo's with one school of cardinals and a couple of blue rams too, or just a school of two varieties of barbs.
 
Nice dimensions! The possibilities are endless. what type of person are you? Perfectionist, do you exotic, are you conservitative, flashy, main stream, trendy? Think about what type of person your are and apply that to you fish collection. Like me i am the Conservative type, love beauty in all forms and prefer style that will stand the test of time. My main tank hold Fl Gar, catfish the gar being the main fish i build my tank around. The gar is a ancient beautiful fish that is very hardy and has stood the test of time. First try to find one type of fish that fits you as a person and build your collection around that one fish. In doing that you can't go wrong.

A tank of cichla w/ a tig and some bichir on the bottom.

Or...A leichardti w/ a bunch of super red servums and some rays on the bottom.

Or a large mbuna conlony as stated.

Or a few armatus w/ rays.
 
Who are your audience? What are you into? Everyone here likes peacock bass, but Rhodes things eat a lot! Look up red head tapajos, altifrons.
I don't have a 180, if I did it'd be a black arrowana, a few endlicheri and my daughters fire eel, my other daughter's black ghoust knife, not a show tank more of a family tank.

Show tank, google 180 gallon you'll see some impressive tanks. Show tanks are always best with small schooling fish and a fee large fish.

I am slowing collecting plants for a 120 south americans with red head tapajos and many clown clowns tht will be my show tank.
 
ya all know my answer.. CICHLA and arowana.. and maybe a BGK or a CK of some variety.
 
central and south american cichlids-there are some absolute stunners out there! i have done mbuna in the past-they just end up killing eachother off after a few years lol.. they tend to be more unforgiving in water parameters also...so i tend to favor SA/CA's
