Generally speaking, Florida gars in captivity max around 20"-24". Sometimes slightly smaller. As for growth, that'll vary depending on care and how much the fish eats but 10" to 20" in one year would be considered very fast for a Florida gar but slow for a Gator gar (just a rough reference for how fast they can grow).
