Up here we do this for Small mouth Bass on Lake Superior.
Hooking a smallie...well it's like grabbing a bulldog.

The problem is, LMB are like garbage cans. They'll eat anything and they're also not picky about water quality. Much like channel cats. Channel cats can taste GREAT ouf clean water with the right food sources, but horrible in other places.
I caught a big fat LMB out of a lake near here and it didn't taste too bad. The longears were still better though.
I prefer panfish, so I usually just throw the bass back and keep the smaller sunfish.
