I am going with Platinum Jack Dempsey's. Start with 6 or so at 2inches. Let them grow and pair off themselves. Keep the pair I like and give away the others to local MFK members I hope.

Was twisted between Red swordtails for a dramatic color difference from the JDs or Pineapple for a more "natural" look.

For bottom feeder I am thinking Albino Marble Hopolo cats.

Well severums don't really stop at 8" necessarily, and the thing about them is that they get almost as tall as they do long. So it's more like a 10x10 dinner plate in size. I think you will find that a 55 is a bit small when they are fullgrown, they need a bit more space than an elongated 8" fish would.
Here are some I used to keep, at about 8". They did get a bit larger than this.

Hi everyone. So I decided to get Danios for the tank & my Severum is still shy. Should I take out some of the plants and have a more open tank for him? Are there any other larger Cichlids for a 55?
 
I would try floating plants. Taking plants out will probably have the opposite effect you want in my experience, the more décor to hide around the more comfortable the fish usually feel. I would not recommend adding any large cichlids to the tank, 55 will be tight for the severum when he's large already. Maybe a couple smaller cichlids like blue acaras as suggested, would help. But you may just need to have some patience, he is a small fish still.

Thank you for your help. I appreciate it. I took the Severum & the Danios back to the store for credit. I thought about it and the Severum was going to be too big for the tank. I ordered a 5 inch Electric Blue Acara from Imperial Tropicals. Are there any other Cichlids that would be OK with him?

No problem, I think that was a smart decision. There are plenty of south American dwarfs which would likely be fine with your acara. Biotodoma cupido is a nice, miniature eartheater-like cichlid that does well in smaller tanks, you could get a pair or group of 3-4 (1 male).

It could be done, but personally I would stick with south American cichlids. The firemouths are centrals and while not the most aggressive CA cichlids, they can get a bit more aggressive than the acara, and like to be in groups of 5+. Also, while both fish are adaptable, the firemouths prefer hard water and higher pH, while acaras usually like softer/lower. Some other good suggestions would be:

guianacara gaeyi
keyhole cichlids
bolivian rams
