I think that the EBJD would probably get demolished by the Salvini. They can be quite evil. Also(and this is my opinion) you want to add the least aggressive fish first. So if you do try this combo I'd go EBJD, GT, then Salvini. Waiting a week between fish will give the others time to get established. As for a stock list for a 75. i think that the GT, Pink or Marbled Convict, and a Firemouth would be a good setup. Just my opinion.

A def no on the EBJD in that tank IME. Mine got along well with an Oscar, but was picked on by a Firemouth and Salvini. She also had probs with a male JD. IME many are better off in a community setup than a SA/CA Cichlid tank. I have a 4" EBJD that swims with Kribs, Cherry Barbs, Bolivian Rams, and Boesemani with no issues in a 55G.
