Depends on the species and where you are, sterlets, siberians, and stellates are legal in many places and are farm cultured. Here in Oregon Greens are not allowed to be kept but Whites fall under gamefish laws and may be kept between 42" and 72" from the Columbia river and 42"-60" elsewhere, however you may only posses 2.
 
That is a big fish.
 
I saw a small,about 6" sturgeon in a petstore about 12 years ago what a cool little fish looked like a little prehistoric monster.
