Fire eel grow very fast in the first year of their life, with good diet and water you would see at least 1 inch per month. Your 75G or 125G future upgrade still too small for Fire eels.
Now do i need anything extra for a canister filter? I've never had one before. Like if I bought a canister filter would it come with everything necessary to set up and run
AC100 is a great HOB filter. If you need just some more BIO filtration you can go with a sponge filter. They don't look so great but they get the job done. Canisters are also good, just a pain when you have to clean them.

+1 ac100 hold a large amount of bio for an hob and even when you upgrade it can be moved to the new tank along with a can to help with mech filtration,purigen, even pothos plants
For the time being I added another penguin 150 to the 75g so it has a penguin 150 & penguin 350. Just until i order another filter.
My 40g has an AC 50(?) i forget which model exactly along with a spare 20gallon filter I had laying around. This too is temporary.
When I order a new filter for the 75g i will move the penguin 150 back to the 40g along with the AC
75g will have the penguin 350 + whatever other filter i choose
