Help needed with ammonia really high

That is definitely a lot of big fish in a 180gal tank, so major bioload. Your biomedia is not enough to keep up with the waste being produced. With that much of a bio-load and that relatively small volume of water, you're going to need to do at least 50% w/c every other day (possibly everyday) just to keep up.

I think your options are lots and lots of daily w/c, get a much larger tank, or significantly reducing stock.
 
As what everyone's been pointing out, water changes until params go normal, also, what is your feeding regimen? For a big stock like that, i would say do an every-other day type of regimen if you havent done that yet. And also, once the params go back to normal, i'd move my weekly water changes to 40-50% weekly as nitrates will bounce off the charts with that high bioload, as soon as you get ammonia and nitrite back to zero, imo and ime.

How big are the rays? the rays alone depending on size is a lot for the gallons. Even tho it reads high still helps. Chances are ur test kits good. When I started a system it spiked hard and stayed their for a good week no matter how much I changed. Check ur filters what's ur cleaning schedules like in them? If they haven't been cleaned then that also can cause the spike.

I agree with everyone that the tank is very over stocked. But your photo of the amonia test before and after water change makes me curious. Have you tested the water for it's amonia level from the tap BEFORE putting it in the tank?
 
I also have an overstocked tank, not that bad though. Anyway, you could always try to add more bio media, and try to incorporate pothos. Helped with my tank.
