I think I agree with the guys. What they are saying is that your tank, likely, was not cycled to the point that it could handle the bio load you placed on it (abruptly?). Ammonia and nitrites in the water = no appetite.
Normal cycling times are 3-5 weeks. With seeding, you are right, it can be faster but you need to make sure you feed the bacteria well. Your wordage "used shrimp to kinda jump start the ammonia cycle" makes me think you only "kinda" started your nitrogen cycle. Hence, the outcome.
2 ppm ammonia is far from lethal dose, enough for fish to lose appetite and be quite stressed but should not kill right away. Perhaps your nitrites are high too - must check those.
7.6 pH is fine, I'd agree. Not a big deal at all. If it was over 8, then I'd try to lower a bit.

Op just keep up with your water changes and if you have a friend with an already cycled tank see if you can borrow a filter that's running on their tank to help add some bb faster.

What else would you like for me to say? Not tryin to be a smart a** ... I've learned somethings today that i didnt know in fish keepin... And i am soaking up all the info that fellow Advanced MFK have to offer.. Im just gonna start over gonna finish the DIY Filter when media arrives wens and buy some goldfish and begin the cycling process over let it cycle for 6 to 8 weeks until ammo, nitrates , nirtites are all under control and good supply BBacteria and Areobic Bacterica has established being that everything was wrong that i first set out and started and learn from my mistakes...
He just meant let us know how everything turns out
