None in a 75. They can hit two feet. Look in the primer at the max sizes and think about who wouldn't have trouble turning around in the what 18" width of your tank? then go from there.
However, you can always GROW an Orante out in your 75G and then upgrade him to a bigger tank later though. 
ornate and endlli is a big NO, you can grow them there but they will need a larger tank considering the potential grow of the two. Endli grow really fast, thus there is a chance that endlli may eat your sens. But you could do 20 sens/albinos in there. Big NO for Jack Dempsey too, get a separate cichlid tank for them.
