How many tanks is too much. Right now i have only two for the moment, its a 55 gallon and 75 gallon, But later on im planning on buying a 210 and working on my monster custom fish aquari 0f at least 10,000 gallons. My friends think im crazy.

Dunno, I have 11 right now, I think at one point I was up to 15. I have several more in mind so I'm not sure how many is too many. I guess if you can't do the maintanance on 'em or pay for 'em it's too many.

ARE YOU FREAKIN SERIOUS!!!!When it's a hatchery it dosen't count. 
Seriously though, is it a hatchery or is it a LFS? Do you breed the fish on site?
At the moment I have 11, at most I had 15. IMO you have too much when you cannot keep up with aquarium care, are getting stressed out by it or when you cannot afford it.

I plan on keeping a maximum of 10 at any one time due to bills, money and space, but Im sure my conscience will let me have more.

I would say when your no longer able to put money in savings, is a good time to think you've waited a little long to stop buying tanks
