Either cycle with fish you can stand losing or cycle with added pure ammonia. The process will take 3 weeks - 6 weeks, pending your setup.

I am assuming you are doing a freshwater setup.

If you know someone with an established tank see if you can get some of their media. That will help speed up your cycle since the established bacteria colony will spread throughout your other media.
 
When the stores open up, put a bacterial supplement like Nutrifin Cycle or some other cycle starter. There are media already seeded with live Beneficial Bacteria as well. In addition and in the very least, use aged water...water that has been allowed to gas of the chlorine. Make sure the temperature is appropriate and don't forget the acclamation process. Fish need to be properly acclimated, more than a 15 minute temperature equalization. PH can be a factor in killing a fish, but more than that I would suspect unhealthy water from the get go. The water may have a very high nitrate level with no ammonia and very little oxygen concentration. Some well water sources are high in dissolved organic compounds not even detectable by the run of the mill water testing kits.
Be vigilant and don't get discouraged. We all fall short of the "ideal" fish keeper.
 
I cycled a tank with 1 filter for about half an hour, then I put another filter in the opposite side of the tank about 25 minutes in and the cycled with both for a further ten minutes. I assume that's what cycling means?

Params, to be honest I don't know, and have no means to find out until the shops open again. < being impulsive and not prepared may be one of the nails in the fishes coffins, now that you mention that.
