Ideas for 6ft tank...

I would do

a few blood parrots
a jack dempsey
a few jewl cichlids
a seganal birchir
a pearsei cichlid
a vejia regini
a few firemouth cichlids
 
If you're into the planted idea and you like knifes, go with a planted zebra knife tank. I considered doing this with my 180g. Add some amazon leaf fish and smaller cats too.
 
I'd get some good lights, and CO2 if you like, and go for a wicked planted set up. If you're not into Discus I'd get a bunch of Rainbowfish (there a lot of species and colors available). They're very active, fairly peaceful, and shoal sometimes. You could pair them with some bottom dwellers such as loaches or cories, and then get some siamese algae eaters and snails (no snails if you get loaches) to eat the algae.
 
I like the ideas mentioned about a nice planted tank and some smaller schools of colorful fish, rainbows, tetras, and some loaches.

But i guess you'll need to decide how high tech you want to go? As in do you want to use Co2, proper substrate, lighting etc, or the absolute minimum?

I you go high tech, then skies the limit, and if low tech, you'll need to choose the correct type of plants for your setup... Eitherway will involve a little experimenting i'd say...

I keep several large cichlids... Jaguar, Red Texas, Green Terror, JD, Oscar, Salvini, Gold Severum and a Tinfoil Barb in a 475gal. If your 6 footer is a 180gal, you could combine any of these say 3 or 4. Beware male Jaguars, potential for 16+ ins and quite aggressive. Mine is female and at 4 yrs old and about 12ins, surely full grown. All these fish are very intelligent, colorful and full of personality. And very easy to feed/care for. Just my personal preferences, I'm sure you will enjoy whatever you decide on!
 
Here's what you do. White sand on the bottom, assorted interesting rocks of similar texture and a huge piece of drift wood that breaks the surface of the water in multiple places. Java fern. java moss. anubias and tetra schools, with a small group of angels, and a bunch of assorted catfish.

A plant tank can be either high maintenance or low maintance.. Not sure how low maintainance the OP wants, but Diana Walstead has a great book on low maintenance planted aquariums. Even if you don't do all her ideas, it's a great read. Oops, just checked Amazon and Alibris, apparently it's out of print now and expensive.. what a bummer.

I would also like to second the idea of a Malawi community (or even a Tang one). It looks like OP has a 180 gallon. tank.. African cichlids are almost as colorful as saltwater.. People coming to my house ask if my Malawi tank is saltwater all the time..
 
If it was a reef before, why not keep it salt but do a low tech FO or FOWLR, plenty of sw fish fit the description you gave, and if it's not a reef you can keep some fish in a FO/FOWLR that you can't in most reefs
