Well...just headed and scaled some (They were already gutted.)

Then I stuffed the top of the cavity with fried bannanas, and then the bottom with parsely, spring onion, and garlic.

The outside is dusted in lime pepper and olive oil. Now baking in the oven for 30 minutes.

I will let you know how it turns out, I did take some pictures but they werent the best. Ill take some more when they are done cooking.

We are working on some things. I do some work in correlation with the local university, and I manage their live fish collection.

I am currently in the process of getting an aqua/perma culture project going, and I am getting a lot of large tanks in there.

We are going to attempt to breed pacu, and raise out a couple other monster fish for food consumption.

Right now its all for the learning process...not much else. If we can get a cool little organic thing going we might get licensed and sell the fish.

How my mom does it is she uses green onions, cilantro, and pepper. After all three have been chopped into small pieces they are marinated with fish sauce then stuffed into the fish belly :) Hmong style!

Thanks for the comment on the video, that is the only way I grill fish, the skin actually is awesome on pacu, and no different the way I grill them. They were actually a little...juicy on the inside that day. I like my fish moist though. :D

Thanks for the comment on the video, that is the only way I grill fish, the skin actually is awesome on pacu, and no different the way I grill them. They were actually a little...juicy on the inside that day. I like my fish moist though. :D

By Oj, do you mean OJ simpson?

Growth wise, we got the fish april 6th.

They came in at 1 to 1.5 inches. We butchered them september 15th, and most were in the 12-15" range.

I think they would have grown faster, but we experimented a lot with different organic foods, and they were kept in the original fry growout pool too long.

We started with a 100g poly tank, and quickly attempted to double that with a sump system.

They never went into the 230-40 ish system, but straight into a 640 pool with about 30-40g of filtration.

From there they went into the 5500...with the larger (over 100g) filter system.

They were kept too long in the 100g, and too long in the 640g. I think they could have gotten much larger I think.
