What are you using for a dechlorinator for the tap water.
What are your parameters in PPM numbers not like "they're OK"
How big is the tank, and what is the entire filtration system lineup...?

well i was using test strips so i wasnt sure if the readings were correct, so i went out and get an API master test kit.
i did a 30% water change this morning and now everything seems to be back on track...my convict is doing ok, just kinda hanging out still though now is swimming around a little bit. I took my water sample into the lfs as well just to be sure and he told me that my water is fine.
I have a 90 gallon tank, Rena XP3, mostly sponges but also a bag of carbon and a micro polish cloth
Im hoping now that everything stays stable and im going to continue using stability

How old is your Carbon?...you do know that if it is too old it can release all the crap it filtered out, back into your water right?...that's why I don't use it...~B

what would you recommend instead of carbon?
In an XP3, I would personally run more of a ceramic type of media.
The foam will work for mechanical and some bio-filtration, the floss is OK for polishing the water, after that it is just a clogging device...
I would go 1 foam tray, coarse under fine,
then 2 ceramic trays, on top of that...

Then for cleaning, all you have to do is remove the foam tray, and rinse in some water you saved from the water change...load it back in the tray and put it back in the bottom of the canister...
