Are they born green or is it just a natural and random change?

It's a trait they are born with, but how much the color is pronounced determines on several factors including stress and substrate color.

Keeping bichirs over white sand will usually cause them to be very pale and hardly show any color at all in an attempt to blend in to their surroundings.
 
Here are a few shots of my bichirs with green in them. My Retropinnis, Weeksii, Polli, and Mokelembembe.

Experience has told me that if I keep my bichirs well fed, there is nothing to worry about. There's another normal sen in there that's an inch smaller than that one. :)

I did learn a lesson not too long ago though because I was fasting the bichirs to get them to accept massivore, and I tried to add a baby albino (lapse of judgement) and my big endli was more than happy to point out my mistake. :(

Since then, I decided to keep them well fed on shrimp, and keep offering massivore, and slowly but surely they're all accepting it. :)
